I am TERRIBLE at vegan cookie baking. It’s something that I’ve been working on but I can’t seem to get a vegan cookie that tastes good. Needless to say, it’s cost me a lot of time and money trying to experiment with certain recipes. So this time, I decided to try a different tactic. Take a cookie recipe that I really like and adapt it to make it work. I think I’ve hit the jackpot with these cookies.

One of my favorite blogs is Dessert for Two. She has these great gluten free chocolate cookies that I fell in love with the day I made them. I was laying on the couch the other day and somehow thought of them and wanted to make them so badly! Problem number 1, they contain an egg yolk. Replacing eggs is my biggest problem when it comes to vegan baking. So, I did some research. There were a lot of alternatives to eggs/egg yolks such as a flax egg, chia egg, nut butters, egg replacers… etc. I chose peanut butter cause I figured that it already has a nutty flavor from the almond meal so it wouldn’t change it too much! Or so I hoped.

These came out GREATTTTTTT!!! Chewy, slightly sweet, slightly crunch, chocolatey, nutty, and delicious! The best part is that it’s small batch so you don’t feel like you have to eat cookies for weeks at a time. In our case, we eat them in 2 days. These are a great gluten free and vegan cookie to have on hand!

Since almond meal is the star, it’s really important to have a good quality almond meal that tastes great and bakes well also!! My personal preference right now is from Anthony’s Goods. It’s all organic and gluten free so you know it’s going to be perfect. Not to mention it has such a great almond flavor and is also unsalted which means that you can definitely control what they taste like. A huge 5 pound bag is less than $20 so if you’re a baker, you know this is for you.

Almond Chocolate Cookies {Gluten Free & Vegan}

Makes 8-10 cookies

Ingredients:

4 tablespoons vegan butter
1 heaping tablespoon peanut butter
1 tablespoon white sugar
3 tablespoons brown sugar
1/2 teaspoon vanilla
1 1/4 cups almond meal
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 cup mini vegan chocolate chips

  1. Preheat oven to 375
  2. Melt the butter and peanut butter together. Add sugars and vanilla and mix well.
  3. In a small bowl, whisk together the almond meal, salt, and baking powder. Add to the wet ingredients and mix well. Finally, stir in chocolate chips.
  4. Line a baking sheet with parchment paper and scoop cookie dough onto sheet. Flatten down slightly with your hand
  5. Bake for 11-12 minutes. Once the cookies come out of the oven, remove from the cookie sheet immediately. The easiest way to do this is just to lift up the parchment with the cookies on in to get them off the sheet.
  6. Let cool and enjoy!
