I have no idea how I even thought of this recipe, but I’m glad that I did. I think that I will attribute it to the fact that I was contacted by Anthony’s Goods asking if I wanted to review some products. When I saw that they had almond flour I was like “ummm, yes puhlease” considering that I go through BAGS of it. I was sent a whole 5 POUNDS which means that I can make everything almond which I love!!!!!! This almond flour is KING.. like legit king. It’s certified organic and gluten free which is a total win. Plus, a 5 pound bag is only $35!!! That’s crazy cheap if you ask me considering that a pound bag at the store can get up to $10 per bag. If you use almond meal a lot then you need to check them out because it will be well worth your money. My other favorite thing about this almond meal is that it is not salted. I’ve bought almond meal before that had salt in it and it was not advertised as such so you can imagine my disappointment to have way too salty sweets. This way, I can control the amount of salt in my recipes. Finally, I love how finely ground it is! It is so smooth between your fingers and has a lovely predominant almond flavor! I really love it and am so glad that I got to try it!

When thinking of how to use the whole bag, I thought of cookies but I already have an almond meal cookie recipe. Then I thought about brownies but I didn’t want to do anything chocolate. Enter CINNAMON! I love the combination of the almonds and cinnamon because they are such earthly natural flavors that compliment each other and taste amazing!!!! I love cinnamon so much, that I even have a board on Pinterest dedicated to cinnamon. Yeah. I’m THAT person. The other great thing about cinnamon is all of the amazing healthy benefits!!!!! Gluten Free and Vegan Iced Cinnamon Almond Blondies

These bars are packed with almond flavor considering you use almond butter AND almond meal/flour. You get a nice cinnamon flavor and even more nuttiness from the coconut. Not to mention, these bars are OIL FREEEEEEEE!!!! No butter, no oil, and they still come out moist and chewy and oh so good! The icing is literally the bomb to go with these because the bars are not overly sweet and then you get a little glazy goodness on top. My boyfriend LOVED these bars because they are filling, delicious, and high protein (about 7 grams per bar)!! Definitely gives these a try as a snack for kids or for yourself on the go!

Iced Cinnamon Almond Blondies {Gluten Free & Vegan}

Ingredients:

1 cup almond butter
1/3 cup brown sugar
1 teaspoon vanilla extract
1 1/4 cup almond meal
1/4 cup desiccated coconut
1 1/2 teaspoons cinnamon
1 1/2 teaspoons baking powder

For the icing:
3/4 cup powdered sugar
1/2 teaspoon cinnamon
1 tablespoon almond milk (plus more if needed)

 

  1. Preheat oven to 350 degrees
  2. Cream almond butter and sugar together until all incorporated. Add the vanilla extract and mix
  3. In a small bowl, combine the almond meal, coconut, cinnamon, and baking powder.
  4. Add dry ingredients into almond butter mixture and mix until well combined (there is no gluten in almond meal so you can mix all you want without worry!).
  5. Spread dough into an 8×8 pan or 9×5 loaf pan
  6. Bake for 22-25 minutes until the top is set to the touch and the edges are just beginning to brown. Cool completely before icing
  7. Combine icing ingredients together. You want it to be thick, but you might need to add more almond milk to get it where it should be. Ice the cooled blondies and let it set (about 10 minute). Enjoy!

    I made these today and they are sooooooo yummy! The texture and flavor is really unique and delicious. I also added 1 egg and 1/2 tsp almond extract.
