Spanish Spinach and Chickpeas

Often times, I get the craving for something vegetarian. So what do I do? Go on my Pinterest vegetarian or vegan board and find something that will satisfy my odd cravings. I came across this recipe from the Simple Vegan Blog and since we used to live in Spain, I knew this was a no brainer.

The neat thing about Spain (for anyone who has never been), is that restaurants serve Tapas, or small plates of food so you can try multiple things instead of sticking to a large dish and missing out on everything else. These chickpeas and spinach are a classic dish that you can find on most menus, and I’ve had it multiple times. This recipe definitely rivals some of the restaurants I’ve been to, and it’s so incredibly easy! Paprika and garlic are the main ingredients and let’s be honest, who doesn’t like garlic? Not to mention, it’s very healthy for you, packed with vitamins from the spinach and a kick of protein from the chickpeas. Definitely try it! Buen Provecho ūüôā

Spanish Spinach and Chickpeas  

Ingredients:

4 cloves of garlic – minced
2 tablespoons paprika
4 cups spinach (fresh-chopped)
1/2 cup water
1 14oz can chickpeas
salt and pepper to taste
2 tablespoons olive oil

1.  Heat the olive oil in a pan and add the garlic. Sauté until golden brown
2. Add the paprika, stir, and add spinach. Add water and salt and cook until spinach begins to soften. Add the chickpeas and stir.
3. Add salt and pepper to taste and cook on medium low heat for about 5 minutes
