Just in time for a summer picnic! Let’s be honest, who doesn’t like sliders? Little bites of deliciousness that are quick to eat, easy to pack, and you can put anything on them! I love salmon so much that I decided to make these sliders just to switch it up a bit. I usually just throw my salmon in the oven and let it go, then eat it straight, but by adding some garlic, some crunch, and of course some bread, you can really elevate a little piece of salmon.

Garlic mayo is probably one of my favorite things and it’s so extremely easy! All you have to do is simmer some garlic in olive oil, let it cool, then stir it with mayo. Didn’t think it would be that easy did ya? I love to use it on a warm potato salad and use it as a spread on a sandwich. It seems like everyone I know is obsessed with garlic, so you can never go wrong with garlic mayo :).

Salmon Sliders with Garlic Slaw

Ingredients:

6 small rolls – gluten free or not

Garlic oil: 1/4 c. garlic, 3 cloves rough chopped garlic

Slaw:
1/2 cup mayo
garlic oil (from above)
1 tablespoon soy sauce
Juice 1/2 of a lemon
1 teaspoon ginger
salt and pepper to taste
1/2 cup finely sliced red pepper
1 1/2 cup thinly sliced cabbage
2 tablespoons fresh parsley

Salmon:
1 Pound salmon, cut into 6 equal portions
soy sauce

1. Prepare the garlic oil: bring oil and garlic to a simmer and watch carefully so that garlic doesn’t burn. Once it begins to simmer, turn burner off and set aside to cool
2. Prepare the slaw: combine mayo, garlic oil, soy sauce, lemon juice, ginger, and salt and pepper in a large bowl. Mix well. Add pepper, cabbage and parsley and mix well. Set in fridge
3. Prepare the salmon: pre-heat oven to 375. Place salmon pieces on a baking sheet line with tinfoil and sprinkle a little bit of soy sauce on each. Bake in oven for 10-12 minutes until desired doneness.
4. Cut slider buns in half and assemble with the salmon on the bottom and slaw on the top. Serve!
